Even though healthcare is a rather niche field for MBA grads, there is still a ton of options within it. This choice really depends on your plans: what kind of organization do you want to work for? (HMO? Hospital? Research center?) If possible, have specific firms / organizations in mind. Once you've determined this you can work backwards. See who's working in those organizations in the kinds of roles you'd be looking for, and see where they studied for their MBA.
Also: For schools of this level, and especially with an industry like this, placements will tend to be highly regional. If you want to work in Texas, I'd lean towards Rice.
