Most of the profiles you find on the economist, FT, Businessweek etc. will give you an indication of how many applicants there are every year. If not, then you can work it out by looking at the numbers they give re. applicants who were/were not successful, taking into account the figures for those who actually took up a place once offered one. Similarly, if you look at an individual school's website they should have all the same, and perhaps even more information.
I agree with the above - there are good schools out there which are not as selective as other good schools, but the very best once are highly selective, and competition for places is therefore much greater.
