Would an MBA from Hofstra be a viable option? My employer will pay for the full cost of the program, but only 5k a year towards other programs. Should I take this option since I wouldn't be paying anything for it?

If the alternative is MBA from NYU - just an example. Then it makes sense to pursue NYU MBA even if it means paying $$$$$ from your pocket.
If the alternative is No MBA or MBA from let's say Pace University. Then go with Hofstra.
If the alternative is No MBA or MBA from let's say Pace University. Then go with Hofstra.
If the alternative is MBA from NYU - just an example. Then it makes sense to pursue NYU MBA even if it means paying $$$$$ from your pocket.
